Artistic Salad: An Edible Bouquet

Take lettuce (various kinds including perhaps red romaine for color)  in one hand and tie with long chive strings. Position the lettuce in a hollowed out cucumber that is flat on one end so that it stands. You may wish to include edible flowers such as nasturtiums and perhaps also create a background of leaves. Et voilà! You have a bouquet for your salad course!

Onion Soup à la Lyonnaise

Here is the recipe for onion soup served in France’s finest restaurants. I learned about it working in some of these restaurants when I was an apprentice (45 years ago!)
